Morotskaka: This is the recipe for the Swedish carrot cake
Ingredients for the dough:
3 eggs
250 grams wholemeal spelled flour
200 grams of carrots
150 grams of ground almonds
120 grams of applesauce
100 grams of cane sugar
100 grams of butter
a teaspoon of cinnamon
half a teaspoon of cardamom
half a teaspoon of baking powder
Ingredients for the frosting:
300 grams of cream cheese
a teaspoon of honey
half an orange
almonds
Preparation of the carrot cake:
Preheat the oven to 200 degrees top/bottom heat.
Mix the eggs with the sugar in a bowl until a frothy mixture forms.
Add flour, baking powder and ground almonds using a sieve.
Heat the butter and stir in with the apple sauce, cinnamon and cardamom.
Wash the carrots, peel them and add them to the dough with a grater. Mix everything well again.
Grease the baking pan, pour in the batter and bake for about 40 minutes.
In the meantime prepare the frosting and mix the cream cheese with honey and the juice of the orange. Then put in the fridge.
Take the cake out of the oven, let it cool completely and garnish with the frosting and the slivers of almonds.
