Here you get a simple but delicious basic recipe for crêpes, the wafer-thin pancake variant of French cuisine.
Ingredients
1 1/2 tablespoons butter
150 grams of flour
350ml milk
3 eggs (size M)
1 prize salt
4 tablespoons sparkling mineral water
some oil for frying
For sweet crepes to taste:
2 tablespoons sugar or 2 sachets vanilla sugar
grated zest of 1/2 unwaxed orange or lemon
Preparation
Melt the butter.
First mix the flour and milk thoroughly with the whisks of the hand mixer.
Then stir in the eggs, salt, melted butter and mineral water.
Mix in the sugar and/or citrus zest for sweet crêpes variants.
Cover the crêpes batter and let it swell for about 30 minutes.
Bake the crêpes one after the other in a crêpes maker or a pan with a little oil.
Tip: Your crêpes will be particularly wafer-thin and even if you bake them in a flat crêpes pan and spread the batter with a wooden spatula.
You can add other ingredients to this basic recipe as you wish and thus prepare a variety of sweet and savory crêpes.
