Baked Parmesan Garlic Carrots - savory, sweet and addictive! Along with my glazed carrot recipe, this is one of my favorite (new) ways to eat carrots. Roasted in olive oil, parmesan and garlic, ordinary carrots are transformed into a special taste experience. I would even go so far as to say that even “carrot haters” will love these parmesan carrot sticks.
The baked carrots (or carrots Parmesan fries) are not just a great side dish. If you're looking for something as flavorful as chips but lower in carbs and fat, Roasted Parmesan Carrot Sticks are ideal! they're barely crispy on the outside and tender at the inner. They are insanely delicious and easy and quick to make!
Ingredients for the baked carrots:
6 tbsp olive oil
300 g carrots / carrots
2 cloves of garlic
3 tbsp grated Parmesan
2 tbsp breadcrumbs
Parsley (optional / approx. 2 tbsp)
sea salt / pepper
Preparation of the parmesan garlic carrot sticks:
Preheat the oven to 200 degrees. Line the baking sheet with parchment paper.
Crush the garlic cloves and mix in a bowl with the olive oil, parmesan, breadcrumbs, sea salt and pepper.
Peel the carrots and quarter lengthways. The sticks should be about 5mm thick.
Fill the Parmesan-garlic-oil mixture into a freezer bag. Add the carrot sticks and knead the bag lightly until all the carrots are coated.
Spread the carrots on the baking sheet and let them cook in the oven for 20 minutes until tender. Turn halfway through.
Sprinkle again with some parsley and serve, the carrot parmesan fries are ready
