Homemade Pancakes

 Water, flour, yeast, salt and oil for frying. The basic ingredients of the pancakes are as simple as the procedure for making them. To create a versatile and very, very tasty "finger food"

Pancakes: the basic recipe

Yesterday afternoon with the house invaded by children from 6 months to 5 years I thought it best to start making pancakes. I'm not sure what clicks in my head when these ideas come to me but I took flour, brewer's yeast, water, salt and I made a dough which I then left to rise. After about an hour, while the older children were playing Gormiti, the three-year-old girl ate bread and salami and the six-year-old relieved her gums by chewing the tea strainer, I started frying.


I used a small saucepan with plenty of seed oil and cooked one pancake at a time. The final dough must have a compact but very soft consistency, it is given a spherical shape (approximate) and if you want you can put mozzarella, anchovies or whatever else you like inside. The end users of my pancakes would have been children and so I preferred to make them as simply as possible. Only at the end did I allow myself a charming decoration with a little tomato sauce and a leaf of parsley on each pancake.


Ingredients

  • 500 grams of flour 00
  • 1/2 cube of beer yeast
  • 2 tablespoons of oil
  • a teaspoon of salt
  • water q.s.
  • fry oil


Method

I dissolved the yeast in a little warm water and added it to the flour. I kept adding water until the dough became very soft and then the salt.

I worked the dough with my hands until I obtained a consistency similar to that obtained when making the dough for bread or pizza, but softer.

Once the basic dough is obtained, it is covered and left to rise and after an hour the volume is about double.

At this point, take spoonfuls of dough and give it a spherical shape - if you want to make it simple - or wrap the dough around the filling and finally fry it in very hot oil.

In the final size that you want to give to the pancake you have to keep in mind that the dough will rise even during cooking.
