Juicy oven-roasted chicken with crispy skin

 INGREDIENTS TO MAKE THE ROASTED CHICKEN RECIPE

  • 1 whole chicken of 1.5 kilos (the best quality)
  • Thyme
  • Rosemary
  • Salt
  • freshly ground black pepper
  • Olive oil
  • 1 lemon
  • White wine, garlic cloves (optional)

HOW TO GRILL THE PERFECT CHICKEN

1.- We start by mashing the herbs in a mortar. I have put the ones that I like but you can put the ones of your choice. In that mortar we add a splash of olive oil and in some cases white wine, it depends on each one.


2.- We impregnate our chicken completely with that mash, we can also put thyme and fresh rosemary inside the chicken as well as a little lemon cut in half. We bridle the thighs so that everything stays inside and we leave it for about 3 or 4 hours to absorb all the flavors. It is best to cover it and leave it in the fridge overnight covered in aluminum foil.


3.- When we have the chicken ready, we put it on a baking tray with the breast side down because it is the driest part and we need all the juices to go towards it.


4.- Place the chicken on a tray so that it is tilted, that is, the juice does not touch the chicken completely. The good thing is that when you release all the juice we can water it.


5.- We have it for 1 hour at 200º and every 15 minutes we water it with the juices and fats of the chicken. When that time passes, we take out the chicken and put another 20 minutes before turning the chicken.


6.- When all that time has passed, we activate the grill for 10 minutes and brown its skin. We fry some fries and we have the perfect chicken.
