This low carb veggie pizza really hits the spot, whether it's for a weeknight dinner or dinner with friends. Who does not like the salty taste of olives and the heat of green peppers together with delicious cheese? Hmm!
Ingredients

- 240 ml grated mozzarella cheese
- 140g raw grated cauliflower
- 2 beaten eggs
- ½ tsp. Salt

- 60 ml tomato sauce
- 120 ml (55 g) grated cheddar cheese or any other grated cheese
- 120 ml mozzarella cheese
- 10 olives cut into slices
- ¼ (35g) green bell pepper, cut into small strips
- ¼ (28g) yellow onion, thinly sliced
- 1 tbsp. dried oregano or dried basil
Instructions
Preheat oven to 180°C (350°F).
Grate the raw cauliflower with the help of a food processor or box grater. Wrap it in a clean kitchen cloth and drain it well to release its water.
In a large bowl, add the cauliflower, grated cheese, eggs (lightly beaten), and salt. Stir well.
Using a spatula, spread the mixture thinly onto a parchment-lined baking sheet to form a circle about 11 inches (28 cm) in diameter. Bake about 20 minutes or until lightly golden.
Remove from oven. Spread tomato sauce over crust and top with cheese. Add olives, peppers and thinly sliced onions. Sprinkle oregano or basil on top.
Raise oven temperature to 420°F (210°C) and bake for 5-10 minutes or until cheese is melted and lightly browned.
