Ingredients

  • 80 grams of sugar
  • 1/2 tablespoon vanilla essence
  • 2 tablespoons of cornstarch
  • 1 tablespoon orange zest
  • 400 ml of milk
  • 3 egg yolks
  • 100ml orange juice


How to make orange pastry cream

We will have all the ingredients ready on the table to start with this recipe. We dissolve the corn starch in half a cup of warm milk, without leaving any lumps and reserve.


In another container we add only the yolks together with the sugar, vanilla essence, beat and add the orange zest, orange juice, mix well. Let's pour the rest of the milk.


Pour the mixture into a saucepan and place over low heat, stirring constantly while cooking, until it begins to boil.


With the help of a sieve, strain the cream to remove lumps or traces of orange zest, pour the mixture back into the pot to bring to a simmer again. Then add the dissolved cornstarch to the pot and stir constantly until the cream thickens.


Once ready, let cool for a few minutes at room temperature and then pour the cream into a container which we will cover with plastic wrap so that it does not layer on top. We take it to the fridge for an hour and it will be completely ready.
