Primavera Pasta Salad

Ingredients
  • 500 gr Short Pasta preferably screws
  • 2 und Zucchini cut into squares
  • 2 und red pepper cut into squares
  • 3 und Ripe tomato diced
  • 1 cup cooked corn kernels
  • 1 package Chopped chives (the white part)
  • 2 teaspoons minced parsley
  • 1 jar stuffed olives with pepper
  • Vinaigrette
  • 1 cup Extra Virgin Olive Oil
  • 1/2 cup red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon salt
  • Freshly ground black pepper to taste


Instructions

Boil the pasta in salted water for ten minutes. Drain and run under cold water to forestall cooking.

Place the pasta in a salad bowl. Add the diced vegetables: the courgettes, the tomatoes and the peppers. Also add the other vegetables: the corn kernels, the olives stuffed with paprika chopped into little wheels, and the chopped parsley.

Prepare the vinaigrette by blending all the ingredients. Add to salad. Let the salad marinate in the fridge for at least two hours.

Serve as a single dish, appetizer or as a side dish. Garnish with clean parsley or fresh basil.
