spicy chicken breading (Easy Recipes)

 

Martino's note: Fried chicken is a real must in American cuisine, this is the recipe of our American reader Bella, whom I thank for her accuracy. In the photo you see next, you can see the chicken next to waffles (or gouffre). It is a classic Southern soul kitchen breakfast, with fried chicken, waffles, butter and maple syrup.


INGREDIENTS

For the chicken

1 - 1.five kg hen cut into 8 portions


For the marinade

500 ml buttermilk

2 eggs

1 tablespoon Worcester sauce

1 tablespoon Creole Seasoning


For the breading

250 gr flour

3 tsp salt

2 tsp paprika

1 tsp white pepper

1 tsp black pepper

1 tsp cayenne pepper

For frying

550 ml peanut oil


INSTRUCTIONS

Wash the chicken well and place it on absorbent paper to remove excess water.


Meanwhile, in a large bowl or plastic container, place the buttermilk, eggs, Worcester sauce and Creole Seasoning. mix nicely with the assist of a whisk.


Add the chicken to the mixture so that the chicken is submerged in the liquid. Cover and refrigerate for 6-24 hours.


Heat the oil in a large skillet up to 168 degrees C. While the oil heats up, mix the breading ingredients well in a plastic bag.


Remove the chicken from the liquid, place the chicken pieces one at a time in the bag, close it and shake it so that the chicken piece is well breaded.


Put the chicken in the hot oil. During cooking, make sure that the temperature of the oil remains around 160 degrees by checking it often. Don't overfill the pan ... leave enough space for each piece of chicken and turn the pieces carefully often with the help of tongs. Cook them until they are golden brown and completely cooked. The cooking time will vary between 18-25 minutes.


Remove the chicken from the pan and drain it on a pie cooler rack placed on a baking sheet.


Cover it with aluminum foil, it will keep warm for at least 20 minutes. Fried chicken is also good served cold, it is just a perfect dish to take to a picnic!
