How to cook Spicy yuyo or spinach with chicken?

Ingredients to cook Spicy Yuyo or Spinach with Chicken (4 portions)
- 1k white potato
- 400 g chicken breast
- 1 bundle of spinach
- 1 large onion
- Minced garlic
- 1/4 Tomato
- Sybarite tuco seasoning
- 1 tbsp special chili
- Pepper
- Salt to taste
- Cumin
- Oil
Preparation:
We remove the leaves and wash our spinach, we can pour hot water on it to remove a little bitterness (for only 10 seconds). Then we will chop into medium pieces and reserve.
In a pot we are going to add a splash of oil, let it heat up and add our finely chopped onion that cooks until it has a transparent tone.
We add 1 tablespoon of ground garlic and brown it a little, then we put 1 tablespoon of special chili, continue browning.
We are going to put our tomato peeled and chopped into small cubes, let it cook for 1 minute.
We add the chicken breast cut into small pieces, we add the pepper, the cumin, 1 teaspoon of tuco seasoning, a little salt and mix everything, let cook over medium heat for 5 minutes to seal our chicken with the dressing.
After 5 minutes we will add the diced potatoes (cover and let cook for 15 minutes)
After 15 minutes we check that the raisins are already cooked and add our spinach (let the spinach cook for 3 minutes).
We rectify the salt and move very slowly so as not to crush the potatoes.
Some people like to add bits of fresh cheese at the end (take salt into consideration)
