Meatball Boats


 Ingredients for 4 boats

  • 2 zucchini
  • 1/4 minced meat
  • 1 cup of soup
  • 1/2 cup grated cheddar cheese


For soup

  • 1 cups beef broth
  • 2 carrots
  • 1 beet
  • 1 onion


Instructions

1- we prepare a soup with the broth and the vegetables, it has to be like a puree

2 - cut the zucchini in half lengthwise and remove the seeds

3- In a baking dish lined with parchment paper, place the zucchini halves and cook in the oven at 350F for about 10 minutes.

4- make 16 balls of minced meat, about 2 cm each

5- remove the zucchini from the oven and place a little of the soup puree on top and add the meat balls.

6- put it back in the oven and leave it for about 15 minutes until the meat is cooked and the zucchini are soft

7- remove, place the cheese and return to the oven until the cheese melts

8- We serve with the rest of the soup


Note.

They can be made with tomato sauce instead of pureed vegetables, but the idea is that the children eat as much of the meat broth as possible! For those who don't take it, it's a good way to camouflage it!
