Ingredients
- 2 tablespoons of flour
- 2 cups flour
- 1 teaspoon baking powder, royal
- 1/2 teaspoons baking soda
- 1/2 teaspoons of salt
- 1 1/2 cups of sugar
- 1/2 cups unsalted butter
- 3 eggs
- 1 cup of cow's milk
- 2 tablespoons lemon zest
- 2 1/2 tablespoons lemon juice
- three cups of icing sugar, for the bitumen
- 1/4 cups unsalted butter, melted, (for the bitumen)
- 1 tablespoon lemon zest
- 1/4 cups lemon juice, for the bitumen
Preparation
Preheat oven to 350 degrees Fahrenheit (190 C).
Grease and flour 2 round cake pans. Add 2 cups of flour, baking powder, bicarbonate of soda, and salt and mix with a balloon whisk.
put the sugar, and ½ cup of butter in a large bowl. Mix with a mixer on medium speed about 5 minutes. upload the eggs, one by one, blending nicely after each.
Add a bit of the flour mixture, then a bit of the milk, and then another bit of flour. Continue like this, finishing with the flour. Add 2 tablespoons of lemon zest and 2 and a half tablespoons of fresh lemon juice.
Spoon the mixture into the 2 cake pans and cook for 32 minutes, or until a toothpick inserted comes out dry. Cool the cakes and unmold them.
To put together the bitumen, blend the icing sugar, lemon juice and butter for the bitumen. mix till you have a creamy texture.
To prepare the cake, put 1 cake and half the bitumen on top. Put the other cake on top and cover with the rest of the frosting. Sprinkle with lemon zest to decorate.
