stuffed sausage


  • 6 Campofrío double milk sausages
  • 1/2 onion
  • 10 sweet potatoes
  • 8 piquillo peppers
  • oil for frying


Clean the primor potatoes with water, cook them in boiling water for 10 minutes, strain and let cool. When they are cold, we cut the two ends of the potatoes and with the help of a parisien spoon we make a hole on one side. Once we have them ready, we fry them in abundant oil. Cut the onion and the piquillo peppers in julienne strips. Brown both ingredients in a pan with olive oil. Cut the sausages in half, place them on a skewer and cook them in a pan with olive oil. With the peppers and onion ready, with the help of a spoon, fill the potatoes. Arrange the sausage skewers on a plate and accompany them with the potatoes.


• Take the parisien spoon and, being very careful not to break the potatoes, turn them into small bowls.
