protein cookies
Ingredients
⅔ cups of sugar
½ cups of butter
1 whole egg
1 whole orange, just the zest
1-⅔ cup flour
1 tablespoon baking powder
½ cups of Chocolate Spread (such as Nutella)
Preparation
In a bowl, cream together the sugar and butter till light and fluffy. add the egg and beat properly till integrated. Next, add the orange zest, flour and baking powder and mix all the ingredients until you get a very soft and smooth dough. Wrap it in plastic wrap and refrigerate for approximately 1 hour.
An hour later, roll out the dough into a rectangular shape, covering it on both sides with plastic wrap. Make it about 2 mm thick. Remove the wrapper on top, take the chocolate cream and spread it over the dough, leaving a couple of millimeters from the edge. Then roll it up slowly. Cover with plastic wrap and refrigerate for a couple of hours, or for about 30 minutes in the freezer.
When it's ready, cut it into slices. Place each slice on parchment paper and bake at 375ºF (180ºC) for about 10-12 minutes. take away the cookies from the oven and allow them to cool on a cord rack.
The Valentine idea: Once you cut them out, using a heart-shaped cookie cutter, shape them into hearts and serve them to your loved one on Valentine's Day.
Or if you're single, like me, just enjoy them for breakfast with a nice cup of cappuccino or hot chocolate, because loving yourself is what really matters!
