BBQ LUNCH BOWL


 INGREDIENTS:

-1 packet Smokey bbq protein shreds I used  (or bbq plant protein of choice)

- corn

- 1 stalk celery, shaved

- ½ cup purple cauliflower, chopped, raw

- ½ red bell pepper, chopped

- 1 carrot, grated

- fresh cilantro


RANCH DRESSING

- 1 1/2 cup vegan mayo

- 1/4-1/2 cup non-dairy milk - any unsweetened

original flavor

- 1 1/2 tsp apple cider vinegar

- 3 cloves garlic - crushed

- 1/2 tbs dried parsley

1 tsp dried dill

1 tsp onion powder

- 1/4 tsp paprika

- salt and pepper to taste

store leftover dressing in an airtight container in the fridge 


MÉTHODE:

FIRST prepare your veggies. For the celery. Make thin ribbons with  your veggie peeler then drop into a bowl of water- this creates those beautiful curls!!

FOR the dressing, simply combine all ingredients into your bowl and whisk thoroughly to combine. Then set aside. 

PREPARE your protein shreds according to package instructions and then it’s time to assemble.
