Peach And Avocado Salad



 3 to 4 servings of green salad

 1 sliced ​​peach

 1 1/4 cup sliced ​​cherry tomatoes

 1 diced avocado

 1 cup cooked quinoa

 1 cup lentils cooked al dente in vegetable stock and drained well

 1/2 of a thinly sliced ​​sweet vidalia onion

 Fresh basil leaves to enjoy

 Additional salt and pepper to taste

 Lime vinaigrette (whisk together):

 Juice of 1 1 1/4 juicy lime

 2 tablespoons + 1 teaspoon of olive oil

 1 teaspoon white wine vinegar or apple cider or wine vinaigrette

 1 teaspoon of dijon mustard

 1/2 teaspoon kosher salt

 1/2 teaspoon pepper

 1/4 teaspoon garlic powder

 1 teaspoon agave nectar


 Mix together the lime vinaigrette ingredients.

 In a mixing bowl, add the salad vegetables, sliced ​​peach, cherry tomatoes and avocado.  Then add the cooked quinoa and lentils, along with the vidalia onions and fresh basil.

 Drizzle in about half of the dressing, and toss gently.  Serve and garnish with vinaigrette as desired.
