Red Velvet Oreo Cheesecake Brownie



For the Brownie base:

• 1/2 cup melted butter
• 1 cup of sugar
• 1 teaspoon vanilla extract
• 1/4 cup cocoa powder
• Pinch of salt
• 1 tablespoon red food coloring
• 1 teaspoon of vinegar
• 2 eggs
• 3/4 cup all-purpose flour

For the Cheesecake Layer:

• 2 packages (8 ounces each) cream cheese, softened
• 3/4 cup sugar
• 2 eggs
• 2 teaspoons vanilla extract

For the assembly:

• Oreo cookies, amount to taste (approximately 12-16), crushed


1. Preparation of the brownie base:
• Preheat the oven to 175°C (350°F).  Lightly grease a 9x9-inch square pan.
• In a large bowl, mix the melted butter, 1 cup sugar, and 1 teaspoon vanilla.  Add the cocoa, pinch of salt, food coloring and vinegar, mixing well after each addition.
• Add the eggs one by one, beating well after each addition.
• Add the flour and mix until well combined.
• Pour the batter into the prepared pan, spreading it evenly.
2. Preparation of the cheesecake layer:
• In a medium bowl, mix cream cheese, 3/4 cup sugar, 2 eggs and 2 teaspoons vanilla until smooth.
• Spread the cheesecake mixture over the brownie layer in the pan.
3. Add the Oreos:
• Sprinkle the crushed Oreo cookies over the cheesecake layer.
4. Baking:
• Bake in the preheated oven for 25-30 minutes, or until the cheesecake filling is set and lightly golden.
• Let cool completely in the mold on a rack.
5. Serve:
• Once cool, cut into squares and serve.
