Tomato Soup

This easy tomato soup recipe is anything but basic in the flavor department! If you're craving homemade tomato soup this is the only recipe you'll need!


    ▢ 1 tablespoon extra-virgin olive oil

    ▢ ½ cup chopped yellow onion

    ▢ 2 garlic cloves minced

    ▢ 1/8 teaspoon red pepper flakes

    ▢ 2 tablespoons sun-dried tomato pesto

    ▢ 1-28 ounce can crushed tomatoes

    ▢ 1/3 cup chicken stock

    ▢ 1 tablespoon minced fresh basil

    ▢ Salt and pepper to taste


In a medium heavy-bottom pot, heat olive oil over medium heat. Add onion and cook until softened, about 3-4 minutes. Add garlic and red pepper flakes and cook until fragrant, about 1 minute.

Stir in pesto, tomatoes, and chicken stock. Bring to a boil, then reduce to a simmer and cook until slightly thickened, about 10 minutes.

Season with salt and pepper. Blend using an immersion blender. Strain if you prefer a thinner-textured soup.

Stir in fresh basil and serve immediately.
