Savory Tuna Niçoise Salad


 

Nothing quite like a Savory Tuna Niçoise Salad with a slightly sweet lemony honey mustard dressing especially when it’s made with high quality sustainably sourced solid white albacore tuna. Blue Harbor Fish Co. is hands down the best clean-cut tuna brand in Florida. It’s fresh and mild tasting with a firm and meaty texture so tasty that I eat it straight out of the can.

For the Tuna Niçoise salad arrange romaine lettuce leaves onto a platter. Top with one can of solid white wild albacore tuna packed in water with no salt added along with boiled and sliced red potatoes, steamed green beans, white cannellini beans, soft boiled eggs, sliced cherry tomatoes, kalamata olives, creamy avocado chunks and chopped scallions.

To make the dressing in a small mason jar combine:

– 2 tablespoons extra virgin olive oil.

– 2 tablespoons fresh lemon juice.

– splash of red wine vinegar.

– 1 tablespoon whole grain mustard.

– 1 teaspoon raw honey.

– 1 teaspoon minced shallots.

– 1/2 teaspoon minced garlic.

– 1/2 teaspoon salt.

– 1/2 teaspoon pepper.

Cover tightly with lid and shake well until creamy and combined. Drizzle the dressing generously on top of salad.
