Banana-Strawberry Cheesecake Fantasy



For the Crust:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:

24 oz cream cheese, softened
1 cup granulated sugar
3 ripe bananas, mashed
3 large eggs
1 teaspoon vanilla extract
For the Strawberry Swirl:

1 cup fresh strawberries, chopped
2 tablespoons granulated sugar
1 tablespoon lemon juice

Prepare the Crust:


Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
Press the crumb mixture firmly into the bottom of the prepared springform pan. Set aside.
Make the Cheesecake Filling:

In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy.
Add the mashed bananas, eggs, and vanilla extract, and continue beating until well combined and creamy.
Assemble the Cheesecake:

Pour the cheesecake filling over the prepared crust in the springform pan.
Prepare the Strawberry Swirl:

In a blender or food processor, blend together the chopped strawberries, granulated sugar, and lemon juice until smooth.
Spoon dollops of the strawberry mixture over the cheesecake filling.
Use a knife or toothpick to gently swirl the strawberry mixture into the cheesecake batter.
Bake the Cheesecake:

Bake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
Remove from the oven and let the cheesecake cool completely in the pan on a wire rack.
Chill and Serve:

Once cooled, refrigerate the cheesecake for at least 4 hours or overnight before slicing and serving.
